The temperatures outside are pretty close to those at the foothills of the Himalayas this morning, the cuisine is also going to pretty close. 

Today we’re running our Indian cookery class where delegates will learn the art of creating highly authentic spice blends and masala’s.  This 1 day Indian cookery classes focuses on developing an understanding of the essence and flavours of herbs & spices used in Indian cookery.  Delegates will touch , feel, smell, taste the spices as individual component ingredients to gradually begin to build a spice blend.  In doing so,discover the flavours and the variable tastes of the spices to their palette.

Flavours of the East from beautiful Bangkok are summed up in this highly original and authentic Thai cooking class, here at The Cooking Academy in Rickmansworth.  

Thai cuisine is made up of lightly prepared dishes packed with spicy, fresh and well-balanced flavours.  As with Asian cooking it is based on the five taste senses of  heat through chilli,  sour flavours with the use of tamarind,  salty flavours typically using fish sauce, sweet flavours using jaggery, pure sugar, from cane juice and and unami flavours, bitter from lime.

We cover some of the classic Thai dishes that appear in menus throughout Thailand, highly original recipes that hit the note with all our customers and will leave your guests wanting to come back for more.   Our cookery classes are entirely hands on with all the recipes being cooked by attendees – No demonstrations, we want you to actually learn by making the cookery journey yourself and experiencing first hand to ensure you remember and can re create the dishes at home in your own kitchen.

Middle Eastern Cookery classes At The Cooking Academy

 Middle Eastern cookery classes are becoming ever popular with more and more of us interested in this wonderful aromatic cooking.  One of my favourite places to enjoy Middle Eastern food is Maroush in theWest End,Edgware Road, just past Marble Arch.   

 I started cooking Middle Eastern food many years ago and have come to serve this cuisine at numerous dinner parties and has always gone down very well as it has a very relaxed style of eating and enjoying food the balance of spices is generally pleasing to most palettes.

 The classic staples of Middle Eastern food is Lamb, chickpeas wheat bread and aubergine all subtly touched with fragrant spices and herbs and accompanied with liberal servings of some form of yogurt.  In many ways Middle Eastern food, whether it is Lebanese, Iranian or Persian isn’t too dissimilar to Indian food, though perhaps the use of chillies are not as liberal in this cuisine.  Its use of paprika, cumin and many other aromatic spices share common ground with north Indian food. 

 In our Middle Eastern cookery classes we unearth the spice trail and look at the aromatic flavours created by these ingredients.  We will prepare exotic dishes such as chicken tagine with dates & honey, and aromatic lamb meatballs simmered in a tomato sauce with cherries, Spicy vegetables in apricots oven baked, Lamb with chickpeas in a casserole with sweet paprika and an aromatic layered pilaf rice dish. 

 Be prepared to cook a wonderful feast of food to share with your family.
