The temperatures outside are pretty close to those at the foothills of the Himalayas this morning, the cuisine is also going to pretty close. 

Today we’re running our Indian cookery class where delegates will learn the art of creating highly authentic spice blends and masala’s.  This 1 day Indian cookery classes focuses on developing an understanding of the essence and flavours of herbs & spices used in Indian cookery.  Delegates will touch , feel, smell, taste the spices as individual component ingredients to gradually begin to build a spice blend.  In doing so,discover the flavours and the variable tastes of the spices to their palette.

All time favourite class today – The One day Indian cookery class here in Rickmansworth.  We’ll be covering the all important ‘Spice Trail’ which is a comprehensive guide of the herbs and spices used in Indian cookery

This is an ‘all senses’ experience, where the participants will be touching, feeling, smelling, tasting, each and every spice to familiarise themselves with the taste and aroma to be able to distinquish the flavours in food.  The delegates will then go on to create several spices blends.  This is alchemy at its best – where the science of food crosses over into taste and flavours and creates a food feast.

Our aim is to get the delegates involved in ‘real cooking’ to grasp the true essence authentic food; following a recipe is one thing but getting underneath it, is what we do in our classes here at The Academy.  This is the real deal getting down and dirty – sleeves rolled up.

Advanced Indian Cookery class

Indian Cookery class – Advanced – Authentic Indian Cookery classes

Today I’ve been taking students further along their journey into the delights of authentic Indian Cookery!  

This is their 2nd Indian Cookery class,  at least, with us here at The Cooking Academy, and tonight they will likely share the spoils of the day with their family and friends… if they’re not too exhausted from their experience.   It’s a very enjoyable class with no more than 5 delegates, giving it a certain intimacy of a dinner party, getting to know people better and sharing clips of their lives and their cooking.  It is a labour of love – I can truely say and I enjoy every class. 

I am glad to say so many students come back to after their first cookery class with us, to learn more.  That makes it a real honour for us here at the Academy.   Cookery classes are more than just a gift experience!  It is a journey and here at the Academy we work hard to ensure our customers enjoy every minute of it and are inspired to cook.

Learning to cook Indian Cuisine

Indian Cookery classes At The Cooking Academy.

Today I was teaching an Indian cookery class here at The Academy in Rickmansworth.  With Amrit off with an injured ankle and Kristen back in New Zealand for the time being,  I’m racking up a number of classes.  Its all good because I have say its reminded me of why I started on the journey 4 years ago; I am glad I have the opportunity to do what I do as a  job, though its so much more than just a job.  To say I love meeting new people is a cliche but I do love meeting new people and making a small contibution to their life journey on the culinary front.  None more so than today with the group of people I had in my class. 

I’ve already had 2 emails from them this evening so far and i love it….  they’ve been shopping, and their putting into practise what they learn’t today, that’s great! 

 

I’m a happy bunny and I’m glad I do what I do for a living.   I enjoy seeing new faces and I love to see the people come back again and again for classes…  or new recipes  because that means my mission is working ! :-)

 So today we’ve got the ever popular 1/2 day Indian cookery classes.  We could run these everyday and fill them….  this class is a fabulous starting place.  Whether you’re an accomplished cook or a beginner the beauty of this class is you’ll still learn so much. 

This 1/2 day Indian cookery class starts with a spice trail, a detailed look at all the herbs and spices in cooking, whether its Indian or European; you’ll be amazed at just how much cross over there actually is.  you will learn lots of little known facts about the health benefits of the herbs and spices and why they should be used.  This part of the class is usually the element that surprises most people, and the part they enjoy so much because it is outside of the usual learning opportunity;  all the things you should have been taught in your late teens, which could possibly have influeneced your food choices.    There is lots of hands on cooking,  spice blending and making tasty marinades…  fantastic to stock up your fridge for quick suppers and mid week dinners.  The biggest bonus is,  it’s tasty real Indian food that you can learn to cook YOURSELF!

Asian Cookery Classes

Asian Cookery Classes – Using all of your senses 

Today we’re running a one day Indian cookery class.  Our classes are run in small groups – we want to give each  of you as much attention as possible.  All our cookery classes are entirely hands on here at The Cooking Academy. 

We focus on not just the mechanics of how to cook but also why certain ingredients work well together and the chemistry required to create different flavours.   By using each of our senses we learn at a much deeper level, the composition of each ingredients,  so that our understanding of its’ uses are memorable and more likely to be repeated when you return to your own kitchen. 

Our classes will leave you invigorated and entirely motivated to do more home cooking.  Even if you’re not particularly confident in the kitchen, our classes will remedy that, we’ll give you lots of hints and tips to make cooking as easy and as uncomplicated as possible.  

You don’t need to be an experienced cook to attend… just love real food and we’ll teach you how to make the most authentic cuisine this side of Asia.

What’s cooking Today – The One day Indian cookery class

This has to be one of my favourite classes to teach.  It is the perfect blend of teaching new and interesting recipes as well as challenging and fun ones.  Delegates leave on a high, having attempted to make somosa’s from scratch and usually succeed, we don’t let them get away with mastering the skill.  In making somosa’s and the filling they actually learn 3 different recipes which they bring together for one menu item…. now there’s value for money.     The other revelation is making my own recipes of Pakoda’s which are so different to shop bought ones, much healthier and 100 times more tasty… 

I also like to teach things other than sauce bases and curries because real Indian food is so much more!
