Our Indian cookery classes are designed for people who want to learn how to make everyday Indian food in a quick and easy way. Our recipes are simple but authentic and reflect the Indian food eaten by Indian families. A typical will cover a comprehensive spice trail, make a number of spice blends and cook a fish dish, a chicken dish and paneer followed by a number of vegetables dishes and starters such as pakoras and somosas. The class is action packed and entirely hands on with you doing all the cooking. Class sizes are small with only 5 people per class.

1/2 Day Indian Cookery class – Friday 9th July 2010

A cookery class with a big difference – Today Amrit Panesar will take you on a journey of world spices , how they are used commonly in food and how to use them to good effect in Indian cuisine.  You’ll be making a variety of spices blends and then using a range of ingredients with them like, fish, chicken & paneer to a brilliant finished meal.   Set in a beautiful setting it couldn’t be a more relaxing and fun experience.


Cinnamon – The wonder spice

 

Cinnamon

Cinnamon is rich in antioxidants that inhibit blood clotting and bacterial growth (including the bad-breath variety). “Studies also suggest that it may help stabilize blood sugar, reducing the risk of type 2 diabetes,” says Kumud Gandhi of The Cooking Academy Furthermore it may help reduce bad cholesterol. Try half a teaspoon a day in yogurt or oatmeal.”

 How it looks – It is a moderate sized evergreen tree with reddish brown soft bark, with warts and dark purple ovoid fruits.  We would use the bark and its oil

What it does – Bark-Acrid, aromatic, astringent, aphrodisiac, febrifuge, diuretic, and carminative.

 Home Remedies for the Treatment of various Disorders

In cough and cold – helps in expulsion of mucus from lungs, if 250 mg is boiled in milk and given to the patient 3-4 times at an interval of 4 to 6 hours.

 In loose motions and gripes – mix a pinch of cinnamon powder with a pinch of catechu and give 3-4 times a day for relief of disorders. To thicken the semen and to improve digestion, 1 gm powder of cinnamon should be taken with hot water.

 In dysentery – Hall a tsp of the powder of the leaves Is taken everyday to control dysentery.

 In headache – Rub the oil lightly onto the temples to ward off headaches.

 In vomiting – Add a few drops of the oil to water/milk and drink for nausea and vomiting to subside.

 In heavy periods – Take a glass of the decoction of the bark twice a day to control heavy menstrual bleeding.

 In cavities in teeth - A piece of cotton soaked in the oil held in between teeth helps keep infection away.

 In wheezing – Boil pieces of cinnamon, liquorice and palm candy in 3 cups of water and reduce to a cup. Take an ounce of this decoction thrice a day.

 In shooting pain in abdomen – Take a paste of pieces of cinnamon bark with saunph seeds to avoid indigestion and relieve abdominal pain.

 In pyorrhea - To arrest foul odour emitting from the mouth, chew a piece of cinnamon bark thrice a day or hold a concentrated decoction of cinnamon in the mouth for 5 minutes after every meal.

1/2 Day Indian Cookery Class
