Whip up these breakfast muffins in minutes and you’ll have yourself a nourishing breakfast to grab and take with you for those mornings you are on the run! The beauty about this recipe is you can use any ingredients that you have on hand. Eggs are incredibly nutritious, almost the ‘perfect’ food, containing a little bit of almost every nutrient our bodies need! Eggs are high in quality protein, with all the essential amino acids in the right ratios! Just be sure to buy the best quality available, free range and preferably organic.
Ingredients:
3 eggs
250g sweet potato shredded
100g kale or greens shredded
200g cooked quinoa or plain flour
1 tbsp herbs, fresh or dried (rosemary and thyme are excellent, leaves only in both cases )
2 tsp baking powder
½ tsp bicarbonate of soda
½ tsp Chilli flakes
1 tsp roasted cumin powder
½ tsp cumin seeds
1 tsp sea salt
50g goat’s cheese crumbled
Cooking Instructions:
- Preheat oven to 180°C/ 350°F and line with muffin liners, or grease the tray with coconut oil or butter.
- Lightly whisk eggs together in a bowl, mix in all your vegetables, seasoning and spices.
- Add the goat’s cheese, stir well.
- Divide mixture evenly between muffin liners and place in the oven to bake for 20-25 minutes or until golden brown and spring back when lightly touched.
