Author Of A Cupboard Full Of Spices

Kumud Gandhi is the author of this book on spices and her first book is a compendium of spices, used to create authentic Indian recipes. Her Indian heritage of both chemists and spice merchants has greatly influenced her approach to food and cooking where she combines her knowledge and skill to create what she calls the ‘The Alchemy of Food’.

Spices Book Partitions

The first half of the book is all about spices, and this is where you can really get to know your spices and understand, how, when, and where to use them. Not just in Indian food but increase your uses of spices across the board in all your cooking.

The book on spices divides into 12 chapters covering breakfast dishes, starters, street food, fish main courses, meat and chicken main courses, vegetables and side dishes, salads and chutneys, lentils & pulses, rice dishes, breads, sweets & puddings, drinks & juices, and, finally, how to create your own spice blends.

Recipes In The Book

There are over 120 recipes in the book – all providing beautiful photography to show how the recipes could look when cooked, which is always an important factor when deciding whether to try a recipe.

All the recipes in the book are tried and tested hundreds of times through the cookery school and fine dining catering experience Kumud and her team have delivered over the years.

Amazing teacher – great, useful skills were learnt. The delivery of the class was really impressive and the teacher was willing to answer all the questions we asked. I really enjoyed this  Mediterranean class – it was informal, very friendly and very well run.

I recently attended the Comprehensive Indian Cookery Class, I would just like to start by saying what a fantastic two days I had.  The class contained a lot more one to one than I expected which I found very helpful. I learnt so much in proper authentic Indian cooking and to be taught by someone who is so lovely and patient was an absolute pleasure. I have recommended the cooking academy to many of my friends and look forward to visiting again to do the Indian street food cookery class.

“The Malaysian cookery class today was exactly what I was hoping for. The delivery was perfect – it had the right level of theory and practice. I really enjoyed the day and I feel that I learnt a lot.”

“This course has really wrapped up my knowledge of Indian food. After the Advanced Indian class I didn’t think it could get any better but you just did it. Well done – thank you once again for the great hospitality, learning and fun.”

“Thank you for a lovely day yesterday. Your patience, kindness and motivational way of teaching, enables you to carry everyone with you. I can’t wait to make my Chinese dishes at home and even put my own spin on it.”
