Ajwain Seeds – otherwise known as bishops weed or carom is relatively unknown outside of its native India. The seeds resemble cumin and their fragrance is similar to thyme. This fragrance becomes stronger when the seeds are ground or fried in butter or oil.
It is mostly suited to vegetarian food and is used in Guajarati cooking. Ajwain has a particular affinity to starchy foods like savoury pastries and breads or snacks like Bombay mix and potato balls get an extra kick from Ajwain. It is also good with green beans and root vegetables as it helps the digestion process legumes.
