Asafoetida is a fetid resinous gum that comes from a root of a herbaceous perennial plant from the celery family. It was widely used throughout Europe and North America until the early 1900’s.
The plant is dried and used in cooking, releasing a flavour reminiscent of leeks. It is highly pungent as the name suggests and was used extensively in condiments and pickles as well as a flavour enhancer in vegetarian food to harmonize sweet, sour, salty and spicy flavours. Asafoetida should be used with starchy, leafy vegetables and lentils to aid the digestive process.
Our Asafoetida is produced in Maharashtra region of India.
