Black cardamom is also known as the Bengal cardamom – a smoky, woody and camphor like flavour and highly aromatic spice used only in savoury dishes unlike the green cardamom.
It is an essential ingredient in Garam Masala, where both the green and black pods are used. Black cardamom is most effectively used in hearty meaty dishes since it is quite pungent and well absorbed by the density of meat and proteins. This spice is considered too over powering for vegetables. Use only 1 or 2 pods in an average recipe for 4. Remove at the end of the cooking process or just before serving.
