Chaat Masala is a blend of spices used to heighten the tones of a dish much like lemon juice or fish sauce in Thai food; it has both a sweet and a sour taste and is used in street food recipes such as Papri Chaat, Bhel Puri, Bhajia’s and Indian drinks.
It typically consists of dried mango powder, cumin, black salt, coriander and asafoetida though, like most spice blends, the regional recipes can vary.
