These chillies pack a punch! They are widely used in the tarka infusion process where they are tempered in hot oil to flavour it before adding other ingredients such as onions, vegetables or lentils. Using the whole chillies in this process is designed to give a very subtle heat to the dish where the chillies can be removed at the end of the cooking process or served in the dish as a garnish.
