Garam Masala is a well known spice blend in Indian cookery, whose exact composition can vary from region to region. Its literal translation is ‘a warm blend of spices’ so it should not be overly hot.
The quality of blend can vary in commercial production so look out for the higher grade that contain ingredients such as cinnamon, cardamom, bay leaves, star anise, cloves, black pepper, nutmeg, and mace. Garam masala should be used sparingly in recipes so not to overpower the dish.
