Jaggery

Jaggery is a pure, wholesome, unrefined sugar used in cooking to replace conventional sugar to give a natural sweetness to the dish.  It has wonderful rich fudge like flavour somewhere between molasses and caramel and can be used to replace cane sugar in all baking, cooking and culinary uses.

Jaggery is made from sugar cane – with the juice extracted and then boiled to eliminate the live enzymes.  It is then laid into cooling vats where it is dried and then sold in blocks.  It contains the natural goodness of vitamins and minerals inherently present in sugarcane as it is unprocessed unlike sugar which contains sulphur dioxide, lime, phosphoric acid, formic acid, and bleaching agents.
