Spiced Caramelized Pear


For a dish that looks and tastes so delicious you wouldn’t imagine it’s 15 minutes all in and even less to devour it. This is a crowd pleasure using some great ingredients to tickle your taste buds.  If you’re not big on stem ginger, try serving it with Madagascan Vanilla ice cream.   #yummydesserts

Serves 4 


2 dessert pears, peeled, cored and cut into thick slices

50g butter

70g brown sugar

¼ tsp cinnamon powder

1/8th tsp clove powder

¼ tsp crushed cardamom seeds

40g walnuts

 Whipped cream

150 ml double cream

1 tbsp syrup from stem ginger

2 pieces of stem ginger – finely chopped


Preparation instructions: 

  1. Start by whipping the cream until it forms peaks and is set. Add the syrup and re beat to blend in.  Now fold in the stem ginger and set aside in a cool place until ready to use.
  2. Using a large non-stick frying pan, melt the butter and add the pears, sugar, cinnamon, cloves, and cardamom seeds. Cook for about 5-6 minutes on a medium heat.  Add the walnuts and cook for a further 2 minutes.
  3. Now increase the heat and cook for 6-8 minutes on a higher temperature until the pears are golden brown and have a stick-caramelised glaze.
  4. Plate up and serve with a dollop of the ginger cream or ice cream.
  5. Pour into the glasses and garnish with a light dusting of chilli powder on top.
  6. Enjoy!
