A jewel in the crown in Asian cookery, green cardamom is used in sweet and savoury dishes. It has a strong, unique taste, with an intensely aromatic, resinous fragrance – a power house of flavour in a dish. Cardamoms are native to south-eastern Asia from India to Sri Lanka and east to Malaysia and western Indonesia, where it grows in tropical rainforests.
It is the world’s third-most expensive spice, outstripped in price per weight only by saffron and vanilla. It is a common ingredient in Indian cooking where it is used as a whole spice in the infusion process as well as a ground spice – in particular in garam masala and almost always in Indian tea. Look out for the bright green bulbous pods.
